i dont think pasta would but try it over sauteed/panfried fish.

Episode: The Case for Butter
1 to 2 shallots, chopped fine
8 ounces white wine
2 ounces lemon juice
1 tablespoon heavy cream
12 tablespoons cold unsalted butter, cubed
Salt and white pepper, to taste
Combine the shallots, white wine, and lemon juice in a non-reactive saucepan over high heat and reduce to 2 tablespoons.
Add the cream to the reduction. Once the liquid bubbles, reduce the heat to low. Add the butter, one cube at a time, whisking first on the heat and then off the heat. Continue whisking butter into the reduction until the mixture is fully emulsified and has reached a rich sauce consistency. Season with salt and white pepper. Store beurre blanc in a thermos until ready to serve.Would a white wine reduction serve as a good sauce over pasta? Any good recipes?

Chicken in Wine Sauce
Ingredients:
4 large chicken breasts OR
8 thighs, boneless, skinless
Salt
陆 cup dry white wine
1 Cup chicken broth
陆 teaspoon dried tarragon or
1 陆 t. chopped fresh tarragon
2 teaspoons Dijon mustard
1 Tablespoon capers or
2 Tablespoon chopped green onions (top %26amp; bottom)
3 Tablespoon butter, melted
2 Tablespoon flour
Chopped almonds for topping, if desired
Instructions:
1. Place chicken in single layer in large skillet.
2. Sprinkle salt over chicken.
3. Mix remaining ingredients except butter, flour and almonds; pour over chicken; bring to boil; reduce heat; simmer for 15
minutes or till chicken is done.
4. Remove chicken to warmed serving platter.

5. Melt butter, add flour; blend; add to sauce in skillet.
6. Stir till sauce begins to thicken; cook 5 minutes longer. (Let it bubble during this step.)
7. Return chicken to skillet; heat for 1 minute.
8. Place chicken on platter; spoon sauce over chicken and
serve.
Chopped almonds may be served on top.

yes, add some cream and you have a classic pasta sauce.
