I LOVE this recipe from Giada De Laurentiis. It's rich from sun-dried tomatoes %26amp; goat cheese:

Angel Hair with Sun-dried Tomatoes and Goat Cheese Recipe courtesy Giada De Laurentiis

Show: Everyday Italian

Episode: No Sauce Pastas

1 (10-ounce) jar sun-dried tomatoes packed in oil, chopped (oil reserved)

1 small onion, chopped

4 garlic cloves, minced

1/4 cup tomato paste

2/3 cup dry white wine

8 ounces angel hair pasta

Salt and freshly ground black pepper

2 ounces soft fresh goat cheese, coarsely crumbled

2 tablespoons chopped fresh Italian parsley leaves

Heat 2 tablespoons of the oil from the sun-dried tomatoes in a heavy large skillet over medium heat. Add the onion and saute until tender, about 3 minutes. Stir in the garlic and saute until fragrant, about 1 minute. Add the tomato paste and cook for 2 minutes, stirring constantly. Add the wine and sun-dried tomatoes and simmer until the liquid reduces by half, about 2 minutes.

Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook until al dente, stirring occasionally, about 5 minutes. Drain, reserving 1/2 cup of cooking liquid. Add the pasta to the tomato mixture and toss to coat, adding some reserved cooking liquid to moisten. Season the pasta, to taste, with salt and pepper. Sprinkle with the goat cheese and parsley and stir. Mound the pasta into bowls and serve.Pasta recipes anyone?

~~~~~PASTA SHELLS WITH RICOTTA CHEESE
STUFFING
1 (16 oz.) box lg. shells, cooked
1 lb. Ricotta cheese
1/4 c. diced Prosciutto, cooked
Ground veal or spinach
1 egg, lightly beaten
2 c. hot tomato sauce
Preheat oven to 350 degrees. Beat Ricotta, Prosciutto and egg together in a large bowl. Stuff approximately 2 tablespoons of the cheese mixture into each shell and place in a baking pan. Cover with aluminum foil and bake 15 to 20 minutes. Arrange shells on serving plates and pour hot sauce over.
You could make a very simple sauce that doesn't use tomato at all.
One dish we like to make is ravioli stuffed with gorgonzola and walnut, served in a sage butter sauce. Heaven!
Penne a la Carbonara
Recipe courtesy Giada De Laurentiis
1 pound pancetta, diced into 1-inch cubes
Sea salt and freshly ground black pepper
6 eggs, at room temperature
1/2 cup heavy cream, at room temperature
1 1/4 cup freshly grated Parmesan
1 pound dried penne
4 tablespoons chopped fresh parsley leaves
Heat a large saute pan, until hot. Add pancetta and saute until golden brown and crispy, about 5 minutes. Season with black pepper and remove pan from heat.
In a medium bowl, beat the eggs and cream. Season with salt and pepper. Stir in Parmesan, reserving 2 tablespoons for garnish.
In a large pot, boil 6 quarts of salted boiling water. Add pasta and cook until al dente, about 8 to 10 minutes. Drain pasta in a colander. Do not rinse with water; you want to retain the pasta's natural starches so that the sauce will stick. While the pasta is still hot, return it back to the pot. Add the browned pancetta and mix well. Add the cream mixture and coat the pasta completely. It's important to work quickly while the pasta is still warm so that the cream mixture will cook, but not curdle. Add remaining Parmesan and chopped parsley.
This one is super easy. Fettucine, shells, or rotini- use whole-wheat too if you like. Mix it with prepared pesto sauce and generously add blue cheese. I always sprinkle on some crushed red pepper. You can also add asparagus tips (just add to last 2mins of pasta cooking time) and toasted walnuts. Very good!
tons of answers here.
