Anyone have any simple, delicious pasta recipes?

This isn't as entailed as the other recipes, which sound great btw. This one is simple and quick. But very good.





Pasta Diavolo:





Boil some Thin Spaghetti. While that's boiling, melt some butter (about 1/2 cube per pound) with a little olive oil in a frying pan on medium heat. Saute about 2 finely chopped cloves of Garlic until golden but not burned, add 1 tablespoon of Red Chile Pepper seeds. Saute very briefly. Just long enough to release the flavor of the Pepper.





Drain the pasta and toss immediately with the Butter Garlic and Pepper. Add some grated Parmesan and toss lightly.





Serve with a light salad and a nice loaf of crusty Italian Bread.





The whole meal shouldn't take longer than the Pasta boiling.

Fettuccini Carbonara - VERY YUM !





5 teaspoons olive oil


4 shallots, diced


1 large onion, cut into thin strips


1 pound bacon, cut into strips


1 clove garlic, chopped


1 (16 ounce) package fettuccini pasta


3 egg yolks


1 cup heavy cream


3/4 cup shredded Parmesan cheese


salt and pepper to taste





Serves 6.





Heat olive oil in a large heavy saucepan over medium heat. Saute shallots until softened. Stir in onion and bacon, and cook until bacon is evenly browned. Stir in garlic when bacon is about half done. Remove from heat.


Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain pasta, then return it to the pot.


In a medium bowl, whisk together egg yolks, cream, and shredded Parmesan. Pour the bacon mixture over the pasta, then stir in the cream mixture. Season with salt and pepper.

Tomato-Cream Sauce for Pasta - also yum





2 tablespoons olive oil


1 onion, diced


1 clove garlic, minced


1 (14.5 ounce) can Italian-style diced tomatoes, undrained


1 tablespoon dried basil leaves


3/4 teaspoon white sugar


1/4 teaspoon dried oregano


1/4 teaspoon salt


1/8 teaspoon ground black pepper


1/2 cup heavy cream


1 tablespoon butter





Serves 5.





In a saucepan, saute onion and garlic in olive oil over medium heat. Make sure it doesn't burn. Add tomatoes, basil, sugar, oregano, salt and pepper. Bring to boil and continue to boil 5 minutes or until most of the liquid evaporates. Remove from heat; stir in whipping cream and butter. Reduce heat and simmer 5 more minutes.

Seafood Pasta Salad





1-1/2 (8 ounce) packages tri-color pasta


3 stalks celery


1 pound imitation crabmeat


1 cup frozen green peas


1 cup mayonnaise


1-1/2 tablespoons sugar


2 tablespoons white vinegar


3 tablespoons milk


1 teaspoon salt


1/4 teaspoon ground black pepper





Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; rinse under cold water until cool and drain.


While pasta is cooking, chop celery and crabmeat. Run hot water over peas to defrost.


In a large bowl, whisk together the mayonnaise, sugar, vinegar, milk, salt and pepper. Add the pasta, celery and crabmeat and stir until evenly coated. Adjust the salt, sugar or mayonnaise to suit your taste. Chill several hours before serving.





Chuckwagon Salad





1 cup uncooked wagon wheel pasta


1 cup sliced, cooked lean sirloin, cold


3/4 cup sliced onion


1/2 cup chopped green bell pepper


2/3 cup barbecue sauce


2 tablespoons Dijon mustard


2 cups red leaf lettuce, rinsed and torn


2 cups green leaf lettuce, rinsed and torn


1 tomato, sliced





Cook pasta in boiling water until al dente. Drain.


In a medium mixing bowl, combine pasta, beef, onion, and green pepper. Mix well. Stir together barbecue sauce and prepared mustard, and mix into beef mixture.


Serve beef mixture over mixed greens, and garnish with tomatoes.








Prosciutto Pasta





1 (16 ounce) package farfalle pasta


1/4 pound sliced prosciutto


3/4 cup dry white wine


1 pound tomatoes, seeded and diced


1 cup frozen green peas, thawed


1/4 cup butter


1/2 cup finely diced onion


ground black pepper to taste





In a large pot of boiling salted water cook farfalle until al dente. Drain.


Meanwhile, in a large skillet saute onion in butter or margarine until soft and tender. Add prosciutto and saute with onion 2 minutes. Add dry white wine and let simmer for 2 additional minutes. Add thawed tomatoes, peas, and ground black pepper; stir well. Cover and simmer for 10 minutes.


In a large bowl toss drained farfalle pasta with prosciutto mixture. Serve warm.
This is a quick fix pasta dish that my family loves....





4 boneless skinless chicken breast boiled and shreded


1 lb of any pasta u like


1 lb of velveta cheese


1 can of cream of chicken


1 can of cream of mushroom


1 can of rotel (optional)


1 can of sliced mushrooms (optional)


salt and pepper to taste





after u have u'r chicken cooked and shreded boil u'r pasta


in a sperate pot on low to med heat melt ur cheese into the other remaining ingredients then add u'r chicken and pasta and 'ta'da dinner is served! oh and if u perfer a creamier sauce add a lil milk and stir
Fettuccine with Brussels Sprouts


* 8 ounces uncooked fettuccine


* 1 pound fresh Brussels sprouts, cored and separated into leaves


* 1/2 cup chopped red onion


* 1/2 teaspoon minced garlic


* 1/3 cup butter, cubed


* 1 cup shredded Parmesan cheese


* 3/4 cup walnut halves, toasted


1. Cook the fettuccine according to package directions. Meanwhile, in a large skillet, saute the brussels sprouts, onion and garlic in butter until tender. Drain fettuccine; add to the skillet and toss to coat. Sprinkle with the Parmesan cheese and walnuts.

Tomato Basil Fettuccine


* 8 ounces uncooked fettuccine


* 1/4 cup chopped onion


* 1/8 teaspoon crushed red pepper flakes


* 1 tablespoon butter or stick margarine


* 1 (14.5 ounce) can diced tomatoes, undrained


* 1/4 teaspoon salt


* 1/3 cup fat-free evaporated milk


* 1/4 cup chopped fresh basil


* 2 tablespoons grated Parmesan cheese


1. Cook fettuccine according to package directions. meanwhile, in a large nonstick skillet, saute onion and red pepper flakes in butter until onion is tender. Add tomatoes and salt; cook and stir over medium-high heat until most of the liquid is evaporated. Remove from the heat; let stand for 1 minute. Gradually whisk in milk. Drain fettuccine and place in a large bowl. Add the basil, Parmesan cheese and tomato mixture; toss to coat.

Microwave Fettuccine Alfredo


* 2 ounces uncooked fettuccine


* 3 tablespoons half-and-half cream


* 1 ounce cream cheese, cubed


* 3 tablespoons shredded Parmesan cheese


* 1/8 teaspoon salt


* 1/8 teaspoon white pepper


1. Cook fettuccine according to package directions. Meanwhile, in a small microwave-safe bowl, combine the cream and cream cheese. Cover and microwave at 50% power for 2 minutes; stir in the Parmesan cheese until smooth. Stir in salt if desired and pepper. Drain fettuccine; toss with sauce. Add vegetables, chicken, shrimp, beef, cheeses, etc.
