As a family we have a lot of Pasta, and i would like to try out some home made Pasta sauce recipes, instead of the shop brought ones.Does anyone have any good home made Pasta sauce recipes?
just yesterday my wife made one. I liked that.
the base, as always in italian kitchen: tomatoe.
You can use the same as you use for pizza.
Then second important is garlic.
With those two alone, you have a good one, just balance them as you wish, warm it together. You can add as you wish the next very typical ingredience: oregano. which you find on the mother of all pizzas, the ';margharita';. You can try add some olive oil. personally I like that, I live in Spain, maybe its soehting personal, but olive oil with tomatoe I find an always good combo, as well as garlic and olive oil, so it can not harm it, just dont use to much.
Then salt as you wish, or no at all.
Play around, it is a lot cooking by eye.
If not a tomatoe base souce:
Alternative is cheese souce, like i.e. for Gnocci. Thats a creamy one, heavy on stomach.
You can try to make your own Pesto. You need a Mortar. PEsto is made primary of basilicum.
But in the Mortar, you can munch any herbs you like, add olive oil.

Tin of tomatoes, one onion (can be white or red) chopped and fried off with some garlic (as much as you want) - bubble away together and add some seasoning and herbs. You can vary by adding other ingredients too - how about bacon or mushrooms...
Proper carbonara made with egg yolks - YUM!
Fry some bacon in a pan until it's cooked how you like, I like it crispy! Mix together 1 egg yolk per person and one and a half time the volume of cream. Add as much grated Parmesan as you like to the cream and egg yolks. When the pasta is cooked, stir in the bacon then - TAKE THE PAN OF THE HEAT! and stir in the egg yolk mixture. The heat of the cooked pasta and bacon will be enough to heat the sauce without turning it into scrambled egg! Add ground black pepper to taste.
Asparagus or smoked chicken are good additions to this basic sauce.
Just grate lots of cheese into your pasta - usual one or greek cheese, or Parmesan, or Swiss one. ;) Add butter and chopped parsley - enjoy!
Alternatively, chop musgrooms, stew them in oil+water+cream+dill, add salt and pepper to taste, should be nice.
Both of them are simple and tasty.
A tub of something like Philadelphia with garlic (or Boursin), melted down with a little water, just poured over cooked pasta, with a little cheese on top - delicious.
red onion and black olice sauce is nice
4 tablespoons olive oil
2 red onions diced
1 teaspoon sugar
3 tablespoons balsamic vinegar
2 tablespoons black olives
salt and pepper
15 g butter
fresh parsley
heat oil in pan stir in the onions and sugar cook for 5 mins, add vinegar and olives, cook for 2 mins, remove from heat stir in butter and parsley, add seasoning, toss it in hot pasta, yum yum
ricotta and butter sauce,
100g butter
550g ricotta cheese, crumbled
salt and freshy ground peppercorns
melt the butter pour over hot pasta sprinkle ricotta on top season with salt and pepper, toss it all together, serve with salad.
Serves - 5-6
Pasta .. Depends on how much you eat as a family..
Fry 2 chopped onions in a hot saucepan with some olive oil, add 2 (chopped up) chillies. Add more chillies if you like it hot!.
After onions softened.
Add 2 carrots cut into small cubes. Let these again slightly soften, after a while add in 5-6 mushrooms cut up, 3 peppers cut into small pieces, be colourful with your peppers, yellow, orange red!!
Add in a small tin of sweetcorn
Cook these for about 10 mins, before adding in two tins of chopped tomatoes, salt, pepper, some chili powder and a teaspoon of sugar.
If you want add some of the juice of the tinned tomatoes into the pan while you are cooking them off prior putting the tomatoes in.
I normally put some water in the tomato tins, about a quarter in each, swish it about, and chuck this into the pot, to get all the remaining tomato bits out of the tin.
I let this simmer on a low heat for about 30-40 mins. Or if you in a hurry for a little less time. I like to cook it for longer as it gets rid of the acidity of the tomatoes out. Throw in some dried herbs at the end, taste it and add further salt, pepper, sugar if necessary.
Stir in the pasta and serve.
Yummy!! Also add in veggie mince after you put in the onions for a different twist!
lighty fry, garlic and oregano,add tinned or chopped tomatoes, if tinned break out the seeds by hand, and add to fried garlic,mix well onheat add some toatoe puree, and its lush.or you can make tagiateli sauce,fry garlic, mix in a bowl 4dessert spoons of fresh cream.add grated cheese and one egg. boil your tagiateli, drain off water ,put back into pan then add the cream egg and cheese heat through but not boil.
recipe 1. take a can of tomato puree. heat in a pan some cooking oil and olive oil. saute onions, chopped jalepeno,some spinach. add puree, salt and black pepper to taste. pour hot over spaghetti. sprinkle lots of cheese.
recipe 2: make some white sauce(from butter , white flour n milk) add fried onions, green capsicum, two cloves of garlic and cheese. pour over pasta. to make it more cheesy, make cheese sauce out of ur white sauce by adding lots of grated cheese. add boiled eggs and 2 tblspoon of tomato ketchup. comes out yummy.
