What are some great recipes, preferably pasta, for a cold day?

Since this is in the V %26amp; V category, I suspect you are looking for an appropriate dish.





Pasta Primavera





3 carrots, peeled and cut into thin strips


2 medium zucchini or 1 large zucchini, cut into thin strips


2 yellow squash, cut into thin strips


1 onion, thinly sliced


1 yellow bell pepper, cut into thin strips


1 red bell pepper, cut into thin strips


1/4 cup olive oil


Kosher salt and freshly ground black pepper


1 tablespoon dried Italian seasoning


1 pound farfalle (bow tie pasta)


2 Tablespoons minced garlic


15 cherry tomatoes, halved


1/2 cup grated Parmesan





Preheat the oven to 450 degrees F.


In a very large bowl toss all of the vegetables with the oil, salt, pepper, and dried herbs to coat. Transfer the vegetable mixture to 2 heavy large baking sheets and arrange evenly. Bake until the carrots are tender and the vegetables begin to brown, stirring after the first 10 minutes, about 20 minutes total.





Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, about 8 minutes, or to package directions. Drain, reserving 1 cup of the cooking liquid.





Toss the pasta with the vegetable mixtures in a large bowl to combine. Toss with the cherry tomatoes and enough reserved cooking liquid to moisten. Season the pasta with salt and pepper, to taste. Sprinkle with the Parmesan and serve immediately.

Spicy Asian Veggie Pasta





Ingredients





8 ounces rice pasta





1/4 cup gluten-free tamari





2 tablespoons rice wine vinegar





2 tablespoons lemon juice





2 cloves minced garlic





2 teaspoons sesame oil





1/4 teaspoon red pepper flakes (more if you like it hot)





1 teaspoon peanut oil





1 cup chopped red, yellow, or green pepper





1 cup sliced sweet onion





1 cup broccoli florets





1 cup shiitake mushrooms, sliced





1 cup grape tomatoes





Directions





Cook pasta according to package directions. Make sauce with tamari, rice wine vinegar, lemon juice, garlic, sesame oil, and red pepper flakes. While pasta is cooking, heat peanut oil in a wok or large frying pan. Stir-fry peppers and onions. Add broccoli and mushrooms when onion and peppers begin to soften. Stir in tomatoes and sauce. Add noodles and mix well. Can be served hot, at room temperature, or chilled (as a side dish to grilled salmon, for instance).





Serves eight





Each serving contains about 145 calories, 4 grams protein, 2 grams fat, no cholesterol, 28 grams carbohydrate, 1 gram fiber, and 515 mg sodium.What are some great recipes, preferably pasta, for a cold day?
Shrimp and chicken Alfredo. Boil fettucine pasta, cut up shrimp and chicken into bitesized pieces. Add it to the pasta and drench with Alfredo sauce. Cook until shrimp and chicken are done. Make your own sauce or buy it.
