Chicken and Bow Tie Pasta





INGREDIENTS





4 boneless, skinless chicken breast halves


1 (12 ounce) package farfalle (bow tie) pasta


1 (14 ounce) can chicken broth


1 head broccoli, cut into florets


1 medium red bell pepper, thinly sliced


2 cloves garlic, minced


salt and pepper to taste


2 (8 ounce) containers chive and onion cream cheese


1/4 cup freshly grated Parmesan cheese








DIRECTIONS


Place chicken in a saucepan, and add water to cover. Boil 20 minutes. Allow to cool, then pull meat into shreds.


Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain.


In a large skillet over medium-high heat, combine chicken broth, red pepper, garlic, broccoli, salt and pepper. Cover, and simmer for 8 to 10 minutes, until broccoli is crisp-tender. Stir in cream cheese until smooth. Mix in chicken and pasta until evenly coated. Creamy Chicken Pasta With Spinach And Tomatoes Recipe

2 cups uncooked bow tie pasta


4 boneless, skinless chicken breasts


1 10 3/4 oz. can chicken broth


1 9 oz pkg. cream cheese (I used the light kind)


1 9 oz pkg. frozen chopped spinach, thawed and drained (or you can cook the fresh down and use that)


1 tsp. garlic, chopped


1 tsp. salt


1 tsp. pepper


15 cherry tomatoes, cut in half or 1 can of petite diced tomatoes


1/2 cup grated parmesan cheese, optional





In a large saucepan, bring water to a boil, then cook pasta according to the directions on box.





Slice chicken breasts into approximately 1'; cubes. In a large skillet, heat half the can of chicken broth and chicken cubes, turning pieces with a slotted spatula for 5 to 7 minutes until chicken is no longer pink.





Add cream cheese, spinach, remaining half can of chicken broth, garlic, salt and pepper. Heat for about 3 to 5 minutes, until cream cheese has melted. Add cherry tomato halves and cook for an additional 2 to 3 minutes, until tomatoes are soft.





Toss the drained pasta with chicken and vegetable mixture. If desired, sprinkle this dish with parmesan cheese, according to taste.
This would be a great side dish served with the Garlicky Chicken recipe (below).





Lemon Basil Bowties

1 pound bowties, or other short pasta


录 cup extra virgin olive oil


戮 cup pine nuts (about 4 ounces) toasted


1 陆 cups cottage cheese or ricotta cheese


1/2 cup packed fresh basil leaves, chopped


Grated peel of 2 lemons


Salt





In boiling salted water cook pasta until al dente; drain





Transfer the pasta to a large serving bowl and toss with the olive oil. Add the toasted pine nuts, cottage or ricotta cheese, basil, and lemon peel, toss. Season to taste with salt.








Garlicky Chicken Breasts





1 envelope Good Seasons Italian Salad Dressing


陆 cup grated Parmesan Cheese


Mix these together





Moisten 6 skinless boneless chicken breasts with water, dip into mixture, place in shallow baking dish. Bake 400 degrees for 20 - 25 minutes or until cooked through.
