Hi I need some pasta recipes... we dont have alot of food in the house right now. So I dont want like something fancy that I have to go out and buy. Have any good recipes?Pasta Recipes?! Please?!`?
Your house sounds like mine. I often toss cooked pasta with steamed veggies (or however you like to cook them), olive oil, and garlic. I add whatever herbs and/or cheese I have on hand. Any vegetables will work. I'll even use turnip greens if that's all I've got. You're meal will be ready within 30 minutes--hot, fresh, and healthy.Pasta Recipes?! Please?!`?
I like to make what my daughter calls ';Chineese Noodles';. I normally use linguine, but have also made them with spaghetti and even bow tie pasta. Ingredients can vary according to what you have on hand. I use some brocolli, onion, baby corn, carrots, and mushrooms, and eggs. I also like to add cooked chicken. I use frozen veggies. but fresh work also, you just need to cook them longer. Add or omit anything. Sometimes I just add the egg. I always use the onion.
Cook your pasta according to the directions. While the pasta is coooking, thaw your veggies or cook them and cook some boneless chicken breast pieces (I use half a breast) in a little bit of butter and soy sauce till done, and set aside. Make an using 3 eggs. Roll the omlet up and cut into fine thin strips.
In a large deep pan, add some oil and diced onion. You want enough onion to cover the bottom of the pan. Cook the onion till it is tender. If you like garlic and ginger, add fresh chopped garlic and ginger to your onions and fy. Add your veggies and then the cooked chicken (with any juices that are left). Fry for a few minutes. Add your noodles. Season with soy sauce, and hot sauce if you like it hot. Add your egg and enjoy.
melt some butter in some olive oil...add garlic...don't brown garlic because it will taste burnt...add any veggies that you have cook until crisp/done....mix with pasta...add cheese while hot
1. Brown 1/2 pound of ground beef
2.in a 2 quart sauscepan add the following and simmer about 15 minutes: 2 cups chopped tomatoe sauce, 1/4 cup tomato paste, 1/2 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon garlic salt, 1/4 teaspoon oregano, 2 pinches of sugar, drained brownded ground beef
3. add this with 8 oz. of spaghetti noodles
Pasta salad
Cook your pasta, and cool it down with cold water. Add a cup or so of whatever veggies you have (cooked or not) add some baco bits or chopped meat if you have any, pour some dressing or mayo over all. Add olives, cheese, pickles or whatever condiments you have on hand. Serve cold.
This is our favorite, and never ends up the same way-
here's the approx. ratio I use:
3 cups cooked pasta
1/2 cup chopped meat or 3 spoons baco bits
1 cup veggies
1/2 cup dressing
1/4 -1/2 cup condiments, cheese or olives, etc.

Preparing the Perfect Pasta
How do you cook pasta perfectly every time?
1. Boil 4 to 6 quarts of water for one pound of dry pasta. (You can divide this recipe depending on how much pasta you are cooking.)
2. Add the pasta with a stir and return the water to a boil.
3. Stir the pasta occasionally during cooking.
4. Follow the package directions for cooking times. If the pasta is to be used as part of a dish that requires further cooking, undercook the pasta by 1/3 of the cooking time specified on the package.
5. Taste the pasta to determine if it is done. Perfectly cooked pasta should be ';al dente,'; or firm to the bite, yet cooked through.
6. Drain pasta immediately and follow the rest of the recipe.

Summer pasta recipes?
what is your favorite summer pasta recipe?
Mine is:
1 bag rainbow rotini noodles cooked al dente in chicken broth with a dish of lemon pepper.
Toss with 2 tbsp of olive oil and 1 chopped green pepper and 1 small onion.
Let cool. Then put in 1 cooked link sausage (I use a link polish) sliced into pieces and pour 1 can of marzetti's cole slaw over the entire dish and toss. Serve and enjoy.Summer pasta recipes?
A month at least before garden ripe tomatoes are ready, but when they are- chop tomatoes, basil, and splash with olive oil and balsalmic vinegar, add halved balls of fresh mozzarella, sea salt and fresh ground black pepper, and let sit for an hour. Cook spaghetti and drain, pour into large pasta bowl and toss with tomato mixture. Serve with a good crusty italian bread.Summer pasta recipes?
Mine is any kind of cooked pasta (I prefer mine a little more cooked).
I like to cut up tomatoes, cucumbers, onions, green peppers, all preferably fresh from the garden or garden market. I also like to leave them in pretty big slices or chunks.
I toss it all together with my favorite salad dressing and enjoy.
Cheese and ham or pepperoni can be added if you want the protein, but I personally prefer just the veggies.
Cheese tortillini.... (tri-colored if possible) cook as directed.
Add fresh broccoli, carrots, green pepper, red pepper, orange pepper, celery, and onion (you can really add or take out anything you feel in the mood for).
Chop up 1 sliced cooked ham steak (in the lunch meat section), and 1 package of swiss cheese.
Mix together and add one large small bottle of Zesty Italian dressing....
Not only does it look pretty... but it is easy and a big crowd pleaser!!

My fave summer pasta dish is a cold salad. Cook pasta (tricolor rotini is good, elbow wood work fine) till al dente in salted water. Rinse with cold water. Add finely diced red/yellow/green peppers, celery, corn, cherry/grape tomatoes. Add Italian salad dressing to taste. Chill. If you add chicken to it, it works as a light meal, too.
I like Angel hair pasta with a seafood cream sauce it has Italian seasoning, parsley, olive oil, Cream or half and half, Garlic 2-3 cloves of garlic a green peppers any color orange or red for color. I just go By taste when I cook this but I like it strong in flavor
I just got a pasta maker for Christmas and so far my favourite creation is: Whole Wheat Mediterranean Pasta! This is pasta noodles, smothered in a herb tomato sauce (I used bottled sauce and added some finely shredded onions and pitted kalamata olives) and topped with crumbled feta cheese. Very tasty!

1. In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
2. Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
3. Preheat oven to 375 degrees F (190 degrees C).
4. To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
5. Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

I just dice half an onion, a clove of garlic and maybe 8 mushrooms and fry for 5 mins. Then add a tin of chopped tomatoes and some dried basil and oregano and simmer for 10-15 mins. Whilst that is happening I boil some pasta, and chop some chicken. Mix the chicken in the sauce and cook for another 5 mins or so. Then mix all that in with the cooked pasta and stick in a dish and cover with cheese - I like parmesan and cheddar or mozzarella, whatever you have. Theb put that in the oven until the cheese is melted and golden. Remember to heat the oven first to 180 celcius.

Any recipes for chicken, pasta and peas?
i wanted to make something for my husband tonight and surprise him...
the only ingredients i have are the ones above plus the usual spices one has in their cabinet, i also have mrs. dash lemon herb marinade if that helps and a crock pot. any of you have ideas or recipes for me...keeping in mind im not too smart on cooking lingo so if you could dumb the wording down for me that would be great! hahaAny recipes for chicken, pasta and peas?
Dice up boneless/skinless chicken breast in a skillet with some olive oil and some garlic, when the pink is gone add in your prepared al dente pasta and some fresh or drained peas, mix well, add in a can of Cream of Chicken soup, mix and heat through.Any recipes for chicken, pasta and peas?
Do you have any cheese? just about anything will work. I would just cook the chicken and cut it up into cubes. (can be done before or after cooking) Then make a basic cheese sauce.
Melt about a table spoon of butter or margarine in a sauce pan. Then add a couple table spoons of flour. Just enough to make it like a paste. keep heat at simmer to medium. once flour has turned a golden color add in cheese. best of cut into cubes. or just handfuls of shredded cheese. Then about 1/4 to 1/2 cup of milk. let cheese melt. stir in some spices such as pepper and even some garlic powder (whatever you like really). let simmer while you finish everything else.
drain cooked pasta, place the pasta back in pot add in the cooked peas and chicken and mix. pour cheese sauce over pasta mixture and stir to cover.
This is my favorite quick easy dish to make. My mom is Italian and taught me this quick cheese sauce recipe when I was little. It is best in the summer when you have fresh veggies. But since I tend to add peas to every meal trust me this tastes amazing. Hope this helps! Good Luck
Poach your chicken and remove, use the poaching liquid to cook the pasta (add more water).
Drain pasta over canned of frozen peas, and return to pot.
Shred chicken, add to pot and combine with pasta.
Use the Lemon Herb Marinade in the poaching liquid.
you can season your chicken and bake it in the over and place it over the pasta noodles and if you have some pasta sauce then top it off with that and some cheesemicrodermabrasion treatment

Use the Lemon Herb Marinade in the poaching liquid.
you can season your chicken and bake it in the over and place it over the pasta noodles and if you have some pasta sauce then top it off with that and some cheese

I have to agree Suddenly Salad is great - My Husband loves the ranch flavored with fresh tomato and extra bacon added
I know this sounds stupid, but I love Suddenly Salad that comes in a box. Here is the kicker. Add onion, sliced radishes, cucumber. Just before serving add shredded sharp cheddar cheese. It also because of the addition of stuff needs more mayo. The way I look at it is the more colorful the better it gets. There is alot of things you can add to pasta salad and it seems they are always good. Some ideas would be Chicken, Tuna, different cheese other veggies. Just put in what you like or whatever you are hungry for.

An Italian traditional dish is cod fish pieces simmered in a marinara tomato sauce and served with spaghetti. (The original recipe called for salted - dry cod, reconstituted and soaked to release excess salt), I use fresh.

What are some recipes using ORZO pasta that aren't soup recipes?
Could you use orzo with regular marinara sauce? It's so tiny, I imagine the sauce's flavor would overtake it completely. What are some recipes using ORZO pasta that aren't soup recipes?
I am a former chef and use it in rice dishes, sort of a faux rice-a-roni like thing, even with minute rice, just cook it for 2 minutes before adding the rice, but if I use regular rice, I do like the lady before me saute it with the rice like making risotto add the stock, juice or water and other spices and ingredients and bring to the boil, cover and simmer until the rice is ready, covered and let sit to absorb the liquid for 10 minutes.
But you can do like others and make a pasta dish, even cook it with the rice like I said, mix some cooked meat in with it and stuff peppers, eggplant, tomato's, zucchini and even large mushroom caps and bake them in sauces or alone to warm them and get them cooked. What are some recipes using ORZO pasta that aren't soup recipes?
This is so awesome %26amp; easy; I make it all the time! 5 star rating on foodtv.com too!
Ingredients
Salt
1/2 pound orzo pasta
2 tablespoons extra-virgin olive oil, 2 turns of the pan
4 boneless, skinless chicken breasts, 6 ounces
Pepper
2 tablespoons butter
12 cremini or baby portobello mushrooms, sliced
12 shiitake mushrooms, stems removed and sliced
12 white mushrooms, sliced
2 large cloves garlic, chopped
1 tablespoon thyme leaves, a couple of sprigs, chopped
2 large shallots, thinly sliced
2 tablespoons all-purpose flour
1 1/2 cups chicken stock
1 tablespoon balsamic vinegar, eyeball it
3 tablespoons heavy cream or half-and-half, a couple turns of the pan
1/4 cup chopped flat-leaf parsley, a generous handful
Directions
Heat a large pot of water to a boil. Salt the water and add orzo pasta. Cook to al dente.
Preheat a large nonstick skillet over medium-high heat and add extra-virgin olive oil, 2 turns of the pan. Season chicken liberally with salt and pepper and add to the hot skillet. Cook the chicken for 5 to 6 minutes on each side. Remove the chicken from the pan and cover with foil to keep warm.
Return the skillet to the heat, turn heat back a bit, and add the butter. Once the butter melts add the mushrooms and brown stirring occasionally for about 4 to 5 minutes. Once the mushrooms are brown season with salt and pepper then add the garlic, thyme and shallots. Cook stirring occasionally for about 2 minutes or until the shallots are wilted. Sprinkle the flour into the pan and cook 2 minutes more. Whisk in the stock, balsamic vinegar and the cream. Turn the heat up to high and simmer for about 2 minutes or until thickened. Slice the chicken on an angle. Add the parsley and the chicken back to the skillet to heat up, about 1 minute.
To serve, pile orzo on dinner plates and top with the sliced chicken and sauce.
No, the marinara is not the right sauce for orzo. This recipe got rave reviews and we loved it too.

Spring Orzo Salad
From Prevention
Ingredients
2/3 cup orzo
1/3 cup finely chopped red bell pepper
1/3 cup finely chopped orange be
My son and I love orzo, and I prepare it often. The orzo usually takes 8 minutes according to the recipe, but what the recipe doesn't say is: that orzo completely absorbs all of the liquid that it is cooked in. Instead of water, I use chicken broth, and I start out like this: in a pot, I melt a bit of butter, add in all the vegetables, onions, garlic, peppers and saute them lightly, add in orzo and brown, add in the broth(14 ounces) and stir, cover and cook on low heat. In the meantime, I would heat the marinara or other sauce on low, and when orzo has absorbed all of the broth turn stove off, add in your sauce a little at a time, but don't let the orzo cook any longer.
Here's my favorite for orzo.
Boil 1 cup of orzo. Chop up half a bag of baby spinach, drain and rinse a can of garbanzo beans. (Add any other veggies as you like, this is the base recipe.) Zest one lemon, juice 2, combine with 1/3 cup olive oil, salt, pepper, minced garlic, and a big pinch of dried oregano and shake in a jar. Toss the drained orzo over the spinach and beans and toss to wilt. Add the vinaigrette and toss. Top with a package of crumbled feta, toasted pine nuts, chopped green onions and cilantro. It's my favorite either warm or cold dish.
Orzo is better with a lighter sauce and probably best with simply melted butter and a little Parmesan. You could add some garlic to the butter and grind some black pepper over the pasta before serving, but you're right -- a heavier sauce will just obliterate the orzo.

Have you developed any Pasta and More recipes of your own?
All the time. I don't use very many recipes anyway. Like tonight for supper I sauteed sliced zucchini, carrot, onion, celery, radish, put in some Italian herbs, thickened the sauce with cornstarch, and served on a bed of rice noodles. It was scrumptious!Have you developed any Pasta and More recipes of your own?
I make my own version of spaghetti but instead of ground beef, I use pepperonis, mozzarella cheese, marinara sauce (usually Paul Newman's Sockarooni) and Parmesan cheese. It's basically like a pizza pasta. I add red pepper flakes but that's totally up to you.Have you developed any Pasta and More recipes of your own?
pasta primavera...i didnt really make it up

Is that a cooking device ?
I am Italian %26amp; all my Pasta recipes are from scratch but over the years have modified them so they are SUPER fast to make , lol
Happy weekend . D :)
Yes. I mix butter, garlic, and cheese in the pasta. It's so good.
I was going to ask the same thing because I lost the booklet that came with it. ;-)

Well, even though I'm not a true pastafarian (or one at all, really), I do like to follow the FSM's high ritual, and have devised a yummy seafood fettucini with prawns and mussels, and maybe some tasty white fish or even octopus. All in a creamy sauce with dill or basil. Mmm...

Anybody have some foolproof cold pasta salad recipes?
I need some good cold pasta recipes that can substitute as lunches for when the weather gets hot. I try to steer away from using excessive amounts of mayo so any others would be fine. Have any good ones to share? Oh..I'm not a vegetarian so you can put some meat in them. (Tuna, ham, turkey...stuff like that)Anybody have some foolproof cold pasta salad recipes?
My favorite cold pasta salad is :
boiled ';bow tie'; pasta
sliced spanish (black) olives
fresh basil (finely shredded)
semi-dried or sundried tomatoes
Mix all the ingredients together with a little olive oil and garlic. Top with some shaved parmesan cheese.
It is great because it is really fast, really different and tasty and best of all can be made from things that can all be stored for long periods in your cupboard.Anybody have some foolproof cold pasta salad recipes?
just an added tip, if you are unable to keep it cold, don't use mayo, use Veganaise, there are no eggs so it can stay in your lunchbox, plus you can't tell the difference in taste. my husband loves it and he eats anything. Report Abuse
Creamy Fruit Pasta Salad
Just three ingredients combine for a delicious and quick fruit salad perfect for lunch or brunch.
INGREDIENTS:
1 cup uncooked macaroni rings
2 cups creamy deli fruit salad
1/2 cup frozen whipped topping, thawed
PREPARATION:
Cook macaroni rings as directed on package. Drain, rinse with cold water, and drain again. Combine with fruit salad and whipped topping in a large bowl. Refrigerate for 1-2 hours before serving. Store in refrigerator.
I like using different kinds of pasta...rotini,penne,shells,etc.
Tuna is a fav, or diced ham.
Cubed cheese
Diced tomatoes, peas, diced cucumbers, celery are good veggies
Mayo is good, but italian dressing..........or Ranch would probably keep the salads better off.

sliced spanish (black) olives
fresh basil (finely shredded)
semi-dried or sundried tomatoes
Mix all the ingredients together with a little olive oil and garlic. Top with some shaved parmesan cheese.

just an added tip, if you are unable to keep it cold, don't use mayo, use Veganaise, there are no eggs so it can stay in your lunchbox, plus you can't tell the difference in taste. my husband loves it and he eats anything. Report Abuse

In my recipe replace the shrimp with salmon.I would make the pasta and mound the salmon in the center of each pasta plate.Sprinkle with dillweed.
That would be so rich and delicious.
I also have made this recipe without the shrimp and placed salmon patties on top of pasta and lay 2 breadstixs across top.
You could add a few chopped black olives...
This is delicious and makes a beautiful presentation. I use my 15-inch skillet and serve it from the skillet at the table.

This is delicious and makes a beautiful presentation. I use my 15-inch skillet and serve it from the skillet at the table.
ANGEL HAIR PASTA WITH SHRIMP, SNOW PEAS
AND RED BELL PEPPER IN PARMESAN CREAM SAUCE
Adapted From Source: Nestle
Servings: 4
Tender snow peas and jumbo shrimp combine with angel hair pasta in a rich creamy Parmesan sauce. Serve with a fresh green salad and a rustic-style bread to complete the meal.
8 ounces Buitoni Angel Hair Pasta (refrigerated type)
2 medium red bell peppers, seeded and julienned
1/4 pound fresh snow peas, trimmed
1 pound jumbo shrimp, peeled and deveined
PARMESAN CREAM SAUCE:
2 tablespoons butter or margarine
1 1/2 tablespoons flour
1 1/2 cups milk (2% okay)
1/2 cup whipping cream
2 tablespoons grated Parmesan cheese
2 tablespoons chopped fresh parsley
1 tablespoon crushed garlic
1 teaspoon Worcestershire sauce
1 teaspoon Tabasco sauce
1/2 teaspoon salt
1/2 teaspoon ground white pepper
Prepare pasta according to package directions; drain.
Meanwhile, bring lightly salted water to a boil in a large saucepan. Add red bell pepper and snow peas and simmer for 2 minutes.
Add shrimp and poach until bright pink and just cooked through, about 3 more minutes (vegetables should be tender-crisp at this point). Drain well and set aside.
FOR THE PARMESAN CREAM SAUCE:
Melt butter in a large saucepan over medium heat; stir in flour and cook for a few minutes until golden.
Add milk and cream; bring to a gentle simmer, continue to stir until thickened.
Add Parmesan cheese, parsley, garlic, Worcestershire sauce, hot pepper sauce, salt and pepper; stir until blended. Stir in reserved vegetables and shrimp and heat thoroughly, about 2 minutes.
TO SERVE:
Toss with hot, cooked pasta and serve immediately.
Serving Ideas: Serve with green salad and rustic-style bread.
Simple Pasta Recipes?
I get in the kitchen alot and throw together some kind of pasta dish and it usually comes out ok, but i shy away from the creamy sauces because i just dont know what the hell im doing lol.
That doesnt mean all im looking for are creamy pasta recipes, id like anything you could throw at me. Well besides SPaghetti, that one i know like that back of my hand lol. Thanks in advance.Simple Pasta Recipes?
I recommend this recipe all the time. It's great hot or cold and you can substitue the sausage with chicken, beef, or seafood. I have also added other veggies.
MEDITERRANEAN PASTA
1 package of Brown %26amp; Serve Sausage
录 tsp. Oregano
2 Onions (minced)
录 tsp. Salt
Minced Garlic (add to taste)
Dash of Pepper
1 tbs. Olive Oil
2 Tomatoes (seeded %26amp; cubed)
2 Zucchini (sliced thin)
Hot Cooked Vermicelli
陆 tsp. Basil Leaves
Grated Parmesan/Romano Cheese
Cook sausage in large skillet until brown. Remove, cut into 1/3鈥檚 and reserve. Add onions, garlic and oil to skillet. Cook until onions are soft. Add zucchini, basil, oregano, salt and pepper. Cook for 5 minutes more. Add tomatoes and sausage; cover and simmer 10 minutes more, stir occasionally. Serve over Vermicelli.Simple Pasta Recipes?
Next time you make spaghetti, make some extra for the next day. Put some olive oil or butter into a fry pan and heat, add some sliced garlic and stir until you can 'smell the garlic' in the oil/butter. Mix in your plain cooked spaghetti and turn up, stir until covered with the garlicky oil/butter ... add a bit of freshly grated parmesan (you may use already grated, but freshly grated tastes better) and enjoy. This is called 'fried spaghetti' and I was taught to make this by an Italian grandmother. YUM.
Now for that 'cream sauce' ... it's really extremely EASY to make a cream sauce ...
Heat a tablespoon of butter or olive oil, add garlic to taste, then add 1/2 cup of white wine ... reduce the wine/butter by half. Slowly add your cream (you may use half and half or milk, but the heavier the 'cream' the faster this cooks and the better it tastes) and let simmer until it's reduced by half ... add your cheese (parmesan, romano, asaigo, gorgonzola, mozarella) and stir ... you may add any meat and any vegetables to this basic cream sauce, but by varying the cheeses you add you can serve just 'pasta in cream sauce' that will ALWAYS be a hit, or add stuff and make a feast. Both these recipies are REALLY EASY and you should at least try them to figure out the 'times' before you serve them at a party but both are 'watch me while I cook' dishes if you want to ';LOOK LIKE A CHEF'; ... or just serve them and get compliments like never before. My husband (a professional chef for 15 years) taught me to make the cream sauce ... he's French/Scotch, but he cooks Italian like a person born in Italy!
Easy as can be. Add tuna, chicken or ham that is already cooked
Olive Garden Alfredo Fettuccine
1 pint heavy cream
1 stick (1/2 cup) butter
2 tablespoons cream cheese
1/2 - 3/4 cup Parmesan cheese
1 teaspoon garlic powder, add in more to suit your taste if you prefer
Salt and pepper, to taste
8 ounces fettuccine, cooked and drained
In a saucepan combine butter, heavy cream, and cream cheese. Simmer this until all is melted, and mixed well. Add the Parmesan cheese and garlic powder. Simmer this for 15 - 20 minutes over low heat.
Toss pasta lightly with sauce, coating well. Leftovers freeze well.
This is my semi-cheating recipe for alfredo.
Boil your pasta of choice. Melt 4 Tbsp butter in large pan. Add an 8 oz. pkg. of baby bella mushrooms, saute for a bit, then add a couple big spoonfuls of minced garlic, and saute until the mushrooms are as done as you like. Add a jar of Classico roasted garlic alfredo sauce. When that's heated, add about 1/3 cup of half and half, and a couple handfuls of grated Parm, asiago, and Romano. You can adjust the half and half and/or cheese to the consistency you want.
Toss with the pasta, add fresh black pepper, more cheeses, and chopped cilantro.
Ok, well I know you said you were not looking for a creamy pasta sauce, but I make this for me and my bf all the time and it always goes over great, and it is sooooo simple!!!

I love this... it's just my own recipe.
Penne pasta, cooked or grilled chicken breast cut into small cubes. Cook the penne, drain set aside. Saute cooked chicken breast with green and red peppers and onions in olive oil. Once tender add a can of mexican corn and stir. Add to penne and stir in a can of fat free chicken broth (warmed) (how much you need depends on how much pasta you cooked) Serve warm or cold.
I usually do penne, with artichokes, roated red peppers, asparagus and any green vegetables of your choice. Sautee with olive oil, garlic and white wine and it is quick and delicious!!

sautee garlic red pepper flakes black or kalamata olives sundries tomatoes and jarred roasted peppers and either brocolli or spinach in some olive oil and toss it with your pasta- good and light! I like it with chicken too.
my other one is my tomato sauce-
It starts out just like the other one and you can add anything you want into it- I like to just start with the first one and add the tomato but feel free to take anything out or add anything you like (I usually add some browned italian sausage to this one) and once tour garlic is soft and smellin good add 1 can of toamto paste and 2 can of tomato sauce and I like to add just a touch of honey and or cinnamon and then all you have to do is let it simmer for a couple hours and voila you have pasta sauce (it will thicken and lose more acidity the longer you cook it but you'll need to add water when it's gettin thick- just taste it every now and again and when you think it tastes good it's done!)
Orecchiette with Broccoli Rabe, Bacon, and Bread Crumbs
SERVES: 4
For a pleasant change of pace, we toss crisp, golden bread crumbs with the pasta instead of the usual grated cheese. If you don't have orecchiette, replace them with shells, bow ties, rotelle, or fusilli.
Ingredients
1 pound broccoli rabe, tough ends removed, cut into 1-inch lengths
1/2 cup olive oil
1 cup fresh bread crumbs
4 slices bacon, cut crosswise into 1/4-inch strips
6 cloves garlic, minced
1/4 teaspoon dried red-pepper flakes
1 pound orecchiette
3/4 teaspoon salt
directions
In a medium pot of boiling, salted water, cook the broccoli rabe until almost done, about 3 minutes. Drain thoroughly.
In a large nonstick frying pan, heat 1/4 cup of the oil over moderate heat. Add the bread crumbs and cook, stirring, until golden, about 5 minutes. Remove. Wipe out the pan.
In the same pan, cook the bacon until crisp. Remove the bacon and drain on paper towels. Pour off all the fat. Heat the remaining 1/4 cup oil in the frying pan over moderately low heat. Add the garlic and red-pepper flakes and cook, stirring, for 1 minute. Add the broccoli rabe and cook, stirring occasionally, until just done, about 3 minutes longer.
In a large pot of boiling, salted water, cook the orecchiette until done, about 15 minutes. Drain and toss with the bread crumbs, bacon, broccoli rabe, and salt.
NOTES
Fresh Bread Crumbs
The quickest way to make fresh bread crumbs is to tear up a few slices of French or Italian bread and whir them in the food processor. No need to remove the crust.
The bitter bite of the broccoli rabe and the pungent garlic in this dish both require a crisp white wine to act as a neutral foil. Try a pinot grigio from Friuli for good effect.
When I make this dish, I usually cook the bacon first, and then use the drippings to make up some of the volume of olive oil -- especially to cook the bread crumbs in -- it intensifies the bacon flavor in the whole dish!
If you don't have broccoli rabe in your stores or green-grocer's, I like to use blanched broccoli florets (takes longer) or fresh baby spinach leaves (quick and easy - buy them pre-washed at store!). Just toss the spinach in the hot garlic/red pepper oil until coated and just beginning to wilt.
Sometimes - if I'm being really baaaad - I just leave out the veg altogether!
This recipe takes me less than 30 min. to make and gets absolute raves.

Italian Lemon Pasta Salad: Cook bow tie pasta according to instructions on the pasta package. Rinse and lightly coat with cool chill in covered container. Ziplocs work fine. Make vinaigrette with lemon juice instead of the usual vinegar adding a little red wine vinegar, a few smashed garlic cloves and salt, pepper and dried oregano to taste, Add finely diced scallions, artichoke hearts and peeled seeded and diced red bell peppers . I like extra virgin olive oil in the salad dressing. Mix all of the ingredients together. If you hold this overnight you may wish to taste to see if you need additional salt or lemon. This is best with fresh lemon juice. I offer Parmesan cheese on the side but it is optional. Look for the Italian Lemon Chicken recipe from Rao's Restaurant that is located in Harlem N.Y, N.Y..
