Does anyone have a pasta recipe that is to die for? I would like one with a harder difficulty...like with a home-made sauce. Any flavor is fine.Different Pasta recipes?
I find recipes often on allrecipes.com
and epicurious.com
Both have a good ingredient search tool so you can type in anything you have to cook with. Both sites I've used often. I find epicurious to be a bit fancier.

This is a cold salad, but a family treasure!
Curly Mac Salad
1 # Rotini, cooked per instructions.
2 c. grated carrots, 1/2 c. diced onion, 1 c. diced green pepper, 1-12 oz can evaporated milk--chilled, 1 pint real mayonnaise (that's 2 cups), 1 1/2 c. white sugar, 1/2 c white vinegar, 1/2 c cider vinegar.
Place the cooked rotini in a clean ice cream bucket, add the chopped onion %26amp; pepper and carrots. Set aside.
In a large bowl, whip the evaporated milk with an electric mixer until thick and creamy, about 3 minutes. Gradually add the mayo, sugar, and vinegars. Continue beating until smooth and creamy. Pour the dressing mixture over the noodle mixture and stir until well mixed. Refrigerate overnight, and stir before serving. (it will look very strange before you stir, but that is normal)
It makes a large quantity, so its perfect for potlucks or parties...but bring the recipe, as everyone will want it!!
I gotta tell you, recently I tried Rachael's recipe for pizzania and the whole family loved it. You can use anything you like on pizza and make a easy lasagna out of it. I used Itlaian sausage along with the pepperoni

The joy of pasta is it is typically not difficult. This is amazing. Really.
Carbonara
1/4 lb package of mild Italian sausage
1/4 lb prosciutto ham, thinly sliced
1/2 cup minced parsley
3 well beaten eggs
1/2 cup Parmesan cheese
2 tablespoons melted butter
1/2 package thick spaghetti
Cook Sausage until almost done. Add prosciutto and parsley until all is cooked.
Cook the pasta according to package directions; drain.
Add to pasta the butter, eggs, parsley, meats, cheese and pepper. Mix well and serve immediately.
Penne a la Vodka (this is Lidia Bastianich's recipe)
Ingredients:
Salt
One 35-ounce can Italian plum tomatoes (preferably San Marzano) with their liquid
1 pound penne
1/4 cup extra-virgin olive oil
10 cloves garlic, peeled
Crushed hot red pepper
1/4 cup vodka
1/2 cup heavy cream
2 tablespoons unsalted butter or olive oil for finishing the sauce, if you like
2 to 3 tablespoons chopped fresh Italian parsley
3/4 cup freshly grated Parmigiano-Reggiano, plus more for passing if you like
Preparation:
Bring 6 quarts of salted water to a boil in an 8-quart pot over high heat.
Pour the tomatoes and their liquid into the work bowl of a food processor. Using quick on/off pulses, process the tomatoes just until they are finely chopped. (Longer processing will aerate the tomatoes, turning them pink.)
Stir the penne into the boiling water. Bring the water back to a boil, stirring frequently. Cook the pasta, semi-covered, stirring occasionally, until done, 8 to 10 minutes.
Meanwhile, heat the olive oil in a large skillet over medium heat. Whack the garlic cloves with the side of a knife and add them to the hot oil. Cook, shaking the skillet, until the garlic is lightly browned, about 3 minutes. Lower the work bowl with the tomatoes close to the skillet and carefully 鈥?they will splatter 鈥?slide the tomatoes into the pan. Bring to a boil, season lightly with salt and generously with crushed red pepper, and boil 2 minutes. Pour in the vodka, lower the heat so the sauce is at a lively simmer, and simmer until the pasta is ready.
Just before the pasta is done, fish the garlic cloves out of the sauce and pour in the cream. Add the 2 tablespoons butter or oil, if using, and swirl the skillet to incorporate into the sauce. If the skillet is large enough to accommodate the sauce and pasta, fish the pasta out of the boiling water with a large wire skimmer and drop it directly into the sauce in the skillet. If not, drain the pasta, return it to the pot, and pour in the sauce. Bring the sauce and pasta to a boil, stirring to coat the pasta with sauce. Check the seasoning, adding salt and red pepper if necessary. Sprinkle the parsley over the pasta and boil until the sauce is reduced enough to cling to the pasta.
Remove the pot from the heat, sprinkle 3/4 cup of the cheese over the pasta, and toss to mix. Serve immediately, passing additional cheese if you like.
