Ingrediants:


1 pound Mostaccioli, Ziti or other medium pasta shape, uncooked


1 head broccoli or cauliflower, cut into small florets


1 tbsp. cornstarch


1/4 cup water


3 cloves garlic, minced


1 15 1/2-oz. can low-sodium chicken broth


1 10-oz. package frozen mixed vegetables


1 10-oz. package frozen chopped spinach, thawed


Salt and pepper to taste


1 cup grated Parmesan cheese





Directions:


Prepare pasta according to package directions. Three minutes before the pasta is done, stir in the broccoli or cauliflower. Drain pasta and vegetables and transfer to a large bowl.


In a small bowl, dissolve the cornstarch in 1/4 cup of water. Put the garlic in a large saucepan with chicken broth. Simmer over medium heat for 3 minutes. Whisk in the cornstarch. Stir in the mixed vegetables and spinach and cook until hot, about 5 minutes. Toss the sauce and vegetables with the pasta, season with salt and pepper and sprinkle with Parmesan cheese and serve.

Zippy Ziti with Mixed Vegetables

Ingrediants:


8 oz. Ziti, Mostaccioli or other medium pasta shape, uncooked


1 1/2 tbsp. vegetable oil


2 scallions, finely chopped


1/2 tsp. Italian seasoning


2 tbsp. horseradish sauce


1/2 cup skim milk


4 oz. (1 cup) grated Cheddar cheese


1 1/2 cups cooked mixed vegetables


Salt and freshly ground black pepper to taste





Directions:


Prepare pasta according to package directions. Meanwhile, heat oil in a medium saucepan. Add scallions and saute over medium heat until limp. Do not brown. Remove from heat. Stir in Italian seasoning, horseradish sauce, milk and cheese. Cook over medium heat until thickened. Stir in cooked vegetables and heat. Place pasta in a large, heated bowl, and toss with sauce.

Pasta with Roasted Peppers and Broccoli

Ingrediants:


1 pound Mostaccioli, Ziti or other medium pasta shape, uncooked


2 tbsp. vegetable oil


1/2 tsp. hot red pepper flakes


1 pound broccoli florets (6 cups)


2 6-oz. jars whole pimientos or roasted peppers, drained and diced


1/4 cup grated Parmesan cheese





Directions:


Prepare pasta according to package directions. While pasta is cooking, warm the oil and red pepper flakes over medium heat for two minutes. Add the broccoli and saute for 2-3 minutes. Add 1/2 cup water and cover. Cook broccoli until tender-crisp, about 3 minutes.


When pasta is done, drain well. Toss the pasta with diced peppers. Season with salt and pepper to taste. Pour the broccoli over pasta, sprinkle with Parmesan cheese and serve.Any good pasta recipes that are quick, tasty, cheap andhealthy? not to mention yummy.?
This recipe is very easy--and very delicious--and will make people think you know what you're doing in the kitchen. :)





You need angel hair pasta or just thin spaghetti noodles, a jar of alfredo sauce or parmesan and mozzarella sauce (Wal-Mart has it), and a bag of cooked shrimp. You can buy cooked shrimp in small bags for relatively cheap in the freezer section.





Boil the noodles until done. How much you need depends on your serving size.





Put however much shrimp you want to use in a frying pan. (Picture how much you need by seeing how much will be sitting on top of the pasta.) Melt some butter in the frying pan with the shrimp, then sprinkle the shrimp with garlic.





When the noodles are done, mix the jar of sauce in, and heat until warm. Then top with the cooked shrimp.





Wallah--shrimp alfredo--very easy--and delicious!!





(You can follow this same recipe using frozen cooked chicken pieces and substitute for the shrimp.)

Tomato Alfredo Sauce with Artichokes





INGREDIENTS


1 (14 ounce) can artichoke hearts in water


2 tomatoes, chopped


1 onion, chopped


1 cup fresh sliced mushrooms


1/2 cup chopped fresh basil


1/2 cup whole milk


2 tablespoons all-purpose flour


DIRECTIONS


Chop artichoke hearts and place in large skillet with juice. Thicken with flour and milk to desired consistency.


Add onion, mushrooms, tomatoes, and basil. Cook for a short time, leaving vegetables firm and tasty and pretty.


Cook up a batch of your favorite spaghetti noodles (e.g., angel hair or spaghettini). Rinse. Toss artichoke sauce on top of cooked pasta.
