AMATRICIANA SAUCE RECIPE
Bucatini all'Amatriciana

This dish comes from Amatrice, a town on the border between Lazio and Abruzzi about 80 miles northeast of Rome. On the Sunday after Fer Agosto, August 15, Bucatini all'Amatriciana is served with great fanfare at local celebrations.
Fer Agosto, ';Holiday of August';, is one of the most observed Italian public holidays when practically all of Italy comes to a halt. The big factories in the North such as Fiat close their gates and most Italians get in their car or on the train leaving the large towns to the elderly and the tourists. This is one of our favorite pasta sauces.
1 medium onion, finely chopped
2 oz slab bacon or pancetta finely diced
3 T butter
2 - 14 1/2 oz (or 1 28 oz) can Italian plum tomatoes, crushed
1/2 chili pepper, broken into small pieces, or 1/4 t chili pepper flakes to taste
salt and freshly ground black pepper
1/4 cup pecorino cheese
1 lb pasta, bucatini, penne or spaghetti
Pasta pot; saucepan or skillet (we use a large non-stick wok) large enough to fit all ingredients.
MELT butter in a large pan over medium heat.
SAUT脡 the onion until transparent - about 5 minutes.
ADD the chili and pancetta and saut茅 until onion is golden and the pancetta or bacon nice and crisp, about 8 to 10 minutes.
SET the pasta water to boil.
ADD tomatoes and cook over medium-high heat stirring occasionally, making sure sauce does not burn, about 15 minutes.
ADD salt to taste. Careful with the salt, as pancetta and or bacon are quite salty. You will also be adding the cheese, which is rather salty, too.
MEANWHILE cook the pasta.
WHEN done to taste, drain and pour into a warm serving bowl or directly into pan with the sauce, mix well adding grated cheese to taste and serve.
PASS extra cheese at table.
SPAGHETTI can be substituted for the bucatini and in a crunch, pennette.
What are some good recipes for pasta?
This is a recipe my teenage son ';invented';. It's so easy it sounds ridiculous, but I promise it tastes good. Start with sweet Italian sausage; break into bits and brown with a couple of cloves of minced garlic, sliced sweet onion and green pepper (you can actually leave out the garlic, peppers and onions if you don't like them). Meanwhile, cook bowtie pasta until al dente; drain and set aside. When sausage is brown and onion and peppers are soft, add about 1/2 cup (or to taste) Italian salad dressing. Mix well and stir pasta into dish. Sprinkle liberally with grated Parmesan cheese. Goes well with tossed salad and garlic bread, and it takes a max of about 30 minutes from start to finish.
Cheese sauce
Fresh tomato sauce (with parmesan.. so simple but so nice)
A SPICY tomoato sauce (just add some tobasco or chili sauce to tomato sauce)
Roasted veg, eg pepper eggplant red onions
Pesto
May sound strange.. but mayonnaise! (leave pasta to cool first and only add a little bit, along with some cooked bacon and avocado!) It is much nicer than it sounds
Try also adding different things to basic tomato sauces..
Tuna
Different veg - mushrooms, eggplant etc
Bacon
Ham
Sausage
But one of the nicest way to do pasta is simple yet yummy. Drizzle over a little bit of olive oil, and a tiny bit of fried garlic. Yum.
Crab Pasta Bake
8 oz spiral pasta
陆 lb fresh mushrooms
Some garlic powder
陆 c butter
16 oz crab
陆 c sour cream
2 tsp salt
1-陆 tsp dried basil
1-陆 c shredded cheese
1 large onion
Preheat oven to 350 degrees.
Cook pasta according to package instructions. Clean mushrooms. Dice onions. Saute both in butter.
Mix all ingredients together except for shredded cheese. Spread in a 13x9 pan. Sprinkle cheese on top. Bake for 30 minutes.
Cold pasta salad is easy to make - just get some corkscrew pasta, italian dressing, and a bag of frozen vegetables. Boil the pasta, cook/steam/boil the vegetables, then mix together with the dressing.
