I got a pasta machine, which I really wanted! Do you make fresh pasta? Any favourite recipes? Are there any pasta dough recipes that you can make without eggs? (However, all recipes welcome!) Any pointers on using the machine? It is a small, manual, hand-crank one. Thanks!I got a pasta machine for Christmas! Any pointers/recipes?

The tip I've most often heard is even if your basic pasta dough seems crumbly and dry don't worry, it will become more elastic as it goes through the machineI got a pasta machine for Christmas! Any pointers/recipes?
Most popular here are the ravioli.
To make pasta just add water to flour until it forms the dough.
Open the dough with the machine. Fill up pockets of dough with ricotta (cottage cheese), make sure that you close all corners. Let to set for some minutes and boil like normal pasta. Do not make large ravioli and make them all the same size. Serve with your favourite pasta sauce. Good luck.

DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add the penne pasta, and cook until tender, 8 to 10 minutes.
Meanwhile, heat 1 tablespoon of olive oil in a skillet over medium heat. Place bacon in the skillet, and cook until browned and crisp. Add garlic, and cook for about 1 minute. Stir in the tomatoes, and cook until heated through.
Place the spinach into a colander, and drain the hot pasta over it so it is wilted. Transfer to a large serving bowl, and toss with the remaining olive oil, and the bacon and tomato mixture.
