I made this last night and it is one of my favourite meals - real comfort food.

Smoked fish and macaroni bake - very quick and easy to prepare. Sorry, I dont have quantities as I just sort of made it up myself!

Boil macaroni as normal and at the same time steam a portion of smoked haddock over the macaroni. Whils this is cooking, make a simple roux sauce. Drain the macaroni when it is cooked and return to saucepan or a large bowl. Remove skin from fish and flake up the flesh. Stir into macaroni and then mix in the roux sauce. Place in ovenproof dish and top with wholemeal breadcrumbs and some grated edam cheese. Bake until golden-brown on top.

This would be good for cooker lesson as it only takes 10-15 mins to prepare and another 15 mins to bake. Also you can teach the kids how to make a roux sauce. This dish uses simple ingredients and no processed foods. Serve with tossed salad or veg of choice.

Hope you like it !

Sweetie, pasta is delicious, and is there is a certain theme your looking for?Maybe do Italy, since pasta dishes are pretty famous with italy. This is so simple.

Cook up pasta, your choice of cut.I like penne with this, however fettucini or angel hair is good as well.Once you cook up the pasta dice some tomatoes,or purchase a large can(Since your running low on time and a small can of tomato puree.Next finely chop a handful of basil. You will also need some parmesan cheese grated and some mozzarella cheese.Pour your cooked pasta into your baking dish.On top of the pasta, pour 1/2-3/4 can of diced tomato, and 1/2 can of tomato puree(This merely helps the consistancy).Top with chopped basil, and stir to combine.Mix in some grated parmesan cheese, and top with shredded mozzerella.Put this in the oven for 5 minutes,to heat tomato and pasta through, then turn on broiler til cheese is golden on top.Serve with garlic bread,a salad,or some nice oven roasted asparagus.

Tip:If you have time, use fresh diced, and canned puree. The herbs give it that ';fresh'; and/or ';vibrant'; flavor. If you dont have time or access to fresh basil.Take dried, and add some extra virgin olive oil to moisten the basil, before you add it.Fresh is best if you can get it.

Vegetarian lasagna

2 carrots

2 stalks celery

2 fresh young onions

1 pepper

1 little eggplant (aubergines)

2 little zucchini (courgettes)

1 400 g (14 oz) can red beans

700 ml (25 fl oz - 3 C) tomato pur茅e

200 ml (7 fl oz - 3/4 C) white wine

4 tablespoons dried chives

4 teaspoons dried bay leaves, chopped

2 teaspoons dried marjoram

2 teaspoons dried tarragon

4 tablespoons fresh parsley, finely chopped

Some fresh basil leaves

12 tablespoons extra virgin olive oil

250 g (8 1/2 oz) mozzarella cheese

Green lasagna

Dry breadcrumbs

Salt

This is an easy recipe but you must have a lot of time for making it. But the taste is excellent and all your guests will like this first course very much, first of all those people who don't eat meat

Clean all the vegetables, wash and cut into very little pieces. They should have the size of a pea. You could also chop them with a food processor. Before cutting pepper, remember to remove its seeds; remember also to remove the central part of zucchini and eggplant.

Put carrots, celery, onions, pepper, eggplant and zucchini, all chopped, in a large saucepan together with wine, aromatic herbs, parsley, tomato pur茅e and oil. Add some water, season to taste with salt and cook, half-covered, over a gentle heat for at least 30 minutes. Stir with a wooden spoon now and then. If necessary, add other warm water. Few minutes before the end of cooking pour beans and chopped basil into the sauce.

You have to buy lasagna ready to use in baking dish; that is, it isn't necessary to boil them before baking.

Cube mozzarella. Oil a deep shallow baking dish and sprinkle with dry breadcrumbs. Preheat oven to 200掳C (400掳F). Pour some sauce on the bottom of the baking dish; arrange pasta over the sauce, pour other sauce and sprinkle cubed mozzarella. This is your first layer of lasagna. Kep on making other layers in the same way until you finish all the ingredients. The last ingredient must be mozzarella.

Bake for 25-30 minutes. Remove from the oven and let lasagna rest for some minutes before serving.
Cook some pasta first, mix with a tin of chopped tomatoes, a dash of tomato puree, a good pinch of mixed herbs and some grated cheese. (Add mushrooms, ham, bacon if you like)

Top with more grated cheese and bake for about 20 mins.
