3-4 chicken breast tenderloin strips


2 tablespoons cooking white wine (OR 1 teaspoon white vinegar mixed with 2 teaspoons water)


2 tablespoons lemon juice


sprinkle of italian seasoning


1 teaspoon butter (real butter tastes better, margarine will work)


2 tablespoons parmesan cheese





1 cup dry rotini


pinch of salt


6 cups water





1. boil rotini in water with salt until tender. drain, set aside.





2. mix together the wine/vinegar, lemon juice, seasoning, butter, and parmesan cheese. pour into 10 inch skillet with lid. place chicken in skillet, simmer until done. cut into cubes of desired size.





3. (optional) you can add any number of vegetables to this to make a light, filling, HEALTHY meal. diced tomatoes, sauteed spinach, corn, a can of mixed veggies, squash, whatever.Anyone know any good chicken pasta recipes?
* 1 pound dried penne


* 2 chicken cutlets, cut into fingers


* Salt and freshly ground black pepper


* 3 cloves garlic, sliced(if wanted)


* 1/4 teaspoon red pepper flakes(if wanted)


* 3 tablespoons olive oil


* 3 tablespoons roughly chopped fresh parsley, for garnish(if you have some)


* 2 lemons, juiced


* 1/2 cup grated Parmesan(or other cheese)





Directions





Cook the pasta in a large pot of boiling salted water, until al dente(still hard). Drain well.





Season chicken with salt and pepper. Heat a large grill pan over medium high and add chicken. Grill until golden and completely cooked. Remove to a plate and slice.





Add the garlic and red pepper flakes to a saute pan with 3 tablespoons of olive oil and saute until fragrant. Add the cooked pasta and turn heat off. Mix all together.





Remove pasta to a large bowl. Add chicken to the warm pasta and season with salt and pepper. Sprinkle in chopped parsley. Add the juice of 2 lemons and mix. Before serving top with Parmesan.

CHICKEN CAESAR PASTA SALAD





3-4 chopped boneless chicken breasts


Caesar or Italian Caesar salad dressing


2 cups broccoli florets


handful of cherry tomatoes (optional)


pimientos (optional)


4 cups Rotel pasta noodles


1 tsp. olive or vegetable oil





Cook chicken breasts until they are tender and chop into bite size pieces.


Cook Rotel noodles in boiling water for 7 minutes or until tender in water with oil.





Steam broccoli florets (over stove or in microwave) until slightly tender (do not overcook!).





Cut tomatoes in halves and wash thoroughly.





Mix noodles, chicken breasts, broccoli and optional ingredients (pimentos and tomatoes). Drizzle salad dressing until pasta is slightly covered and stir salad until covered in dressing.





Serve either chilled or warm, accompanied by a bottle with extra dressing at table.





Leftovers will keep in refrigerator for up to 4 days or can be frozen for a month or two.








TURKEY OR CHICKEN VEGGIE PASTA SALAD





1 lb. corkscrew pasta, cooked and cooled


1 c. cooked turkey or chicken


4-5 c. assorted raw vegetables (zucchini, bell pepper, onions, broccoli, cauliflower, peas, green beans, etc.)


1/4 c. Parmesan cheese, grated


2 c. prepared Hidden Valley Ranch or Original Ranch dressing





Toss all ingredients in bowl. Chill until ready to serve.
Chicken Arrabbiata -





Ingredients





* 2 tbsp olive oil


* 500g skinless chicken breast fillets


* 1 chopped onion


* 2 crushed garlic cloves


* 2 diced celery sticks


* 2 seeded and chopped fresh green chillies or 1 tsp crushed chilli flakes


* 2 x 400g cans chopped tomatoes





Preparation method





Heat 2 tbsp olive oil in a pan. Add 500g skinless chicken breast fillets, diced, with 1 chopped onion, 2 crushed garlic cloves, 2 diced celery sticks and 2 seeded and chopped fresh green chillies or 1 tsp crushed chilli flakes. Cook for 5 minutes. Stir in 2 x 400g cans chopped tomatoes and seasoning, then bring the mixture to the boil. Reduce the heat and half-cover the pan. Simmer gently for 15 minutes.





This is best served with cooked rigatoni or penne, offering a chunk of fresh Parmesan cheese for grating over, and freshly ground black pepper for a little extra heat.
I make this really easy dish when I'm being lazy





Take bonless skinless chicken breasts,add, salt, pepper, garlic powder and sautee in EVOO or butter


Add lemon juice and set aside





Then boil any pasta of your choice, I usually use penne, angel hair or ziti


while the pasta is just about 2 min away from being al dente, I throw in some broccoli florets in the pasta water and cook for 2 min





Then top the pasta and broccoli with chicken and pour your favorite alfredo sauce on top and top with parmesean cheese.





Quick and yummy!
poach some small chicken breast in chicken stock until just tender. Open jar of green pesto sauce put into pan - add some of the chicken stock to make the sauce slightly runnier and heat.. Cut the chicken breasts into cubes add to the sauce for a couple of minutes.


Boil some pasta - penne, bows etc and voila. Dead easy. You can sprinkle stuff over the top if you want - basil, parmesan, parsley etc

saute chicken and garlic in olive oil, add mushrooms and mix well, add soups, (thin w/water is too thick) just before serving add 1/4 c sour cream. serve over egg noodles

saute chicken and garlic in olive oil, add tomato sauce and tomatos, mushrooms, and spices to your taste, simmer 30 mins, serve over your fav pasta
