Chicken or tuna salad in tomatoes or avacados?
I sometimes make big submarine sandwiches for our dinner and we all love them..
Take a loaf of your favorite bread (I just love sourdough) and slice all the way down, so you have two halves, I pull the bread out of one side, not hallowing it out, just getting the bread ready to make the bed of stuff I lay inside.
I use any combination of the following list - ALWAYS using Italian salad dressing on side of the bread, mayo on the other, totally optional though - but the italian dressing makes it taste like a caterer made it and not me!~
Ham
Roast Beef
Salami
Capicola
Pastrami
Cheddar - sharp, mild, smoked, whatever you want
Havarti
swiss
Red Onions
Sliced Bell Peppers
Pickles
Lettuce
Pickles
Jalapenos - or other sandwich peppers from a jar
olive tapenade or Olives
Olives
I make any combination and our family loves it - they are great to take to ball games, car races, horse races, wherever you want, and we love them in warm weather!

Shrimp and Crab Salad
Use cooked shrimp and good crab like ';Blue Star';. Place it on bed of greens, garnish with blanched asparagus, roasted red bell pepper, a little brown rice and artichoke hearts. Serve with a Lemon Aioli
Great big Salad with chopped cooked meat, cheese cubes, artichoke hearts, tomatoes, hard cooked eggs, celery, green onions, grated carrots, cukes, black olives,sliced sweet red and yellow peppers, and crushed Original Doritos, OR, chopped Browned (Roasted) Pecans for the great crunch.
Toasted and buttered garlic Bread on the side.
(We do it like this....toast the bread in the toaster, spread with butter, sprinkle garlic powder nicely over that.....that's it..) No hot oven.
You could do a salad with chicken (can buy it in the store already cooked and seasoned), put lots of veggies on it. You can serve it with bread.

Chicken salad:
Cook and chop some nice chicken and add to a bowl of lettuce and tomatoes (salad basically), and add 1 tbsp -or more- of mayo or salad cream. You could replace the chicken with prawns or turkey etc.

Here are some salad recipes. You could add chopped ham or chicken, or cooked cold shrimp.
Bacon Salad
4 slices bacon
1 lg bowl salad greens
陆 chopped red onion
Salt
Pepper
Red Wine Vinegar
In salad bowl, combine the salad and onion. Coat with 录 cup red wine vinegar, salt and pepper. Chop bacon into little pieces. Cook until crispy. (You may need to add a little olive oil if bacon is very lean). Pour bacon and grease over salad.
Broccoli Cheese Salad
4 cups broccoli, cut into small pieces
1 red onion, chopped
1 cup cubed cheddar cheese
6 slices bacon, cooked, crumbled
Combine above ingredients. Combine 1 cup mayonnaise, 录 cup sugar, and 2 Tbsp vinegar, salt and pepper to taste. Pour over salad.
Southwestern Ranch Salad
1 pkg. pre-cut salad mix
陆 cup shredded sharp cheddar cheese
1 cup ranch flavored croutons
陆 cup ranch flavored almond salad topping
Hidden Valley Spicy Ranch dressing
Salt and pepper to taste
Toss all ingredients together. Serve immediately.
Caesar Coleslaw
1 pkg pre-made coleslaw
1/4-1/2 cup shredded parmesean cheese
1/2 pkg caesar croutons
1 bottle creamy caesar dressing
Toss first three ingredients together. Add enough dressing to coat. It's even good the next day!
Chinese salad
Dressing Ingredients:
2/3 cups oil
1/2 cup sugar
1/4 cup cider vinegar
Ramen package flavoring
Salad Ingredients:
1 pkg. coleslaw mix
1 bunch green onions (chopped)
1/2 cup sesame seeds
陆 cup sliced almonds
1 pkg. chicken ramen noodles (broken up, with seasoning)
Mix dressing ingredients. Refrigerate until you鈥檙e ready to serve. Toast sesame seeds, almonds, and ramen noodles in 350 oven until toasted. Mix salad ingredients. Add toasted ingredients, dressing and toss.

Try a cold chicken salad with boiled and shredded chicken, lettuce, jalapeno peppers, green olives, cherry tomatoes, dressed with mayo, lemon juice, salt n pepper and cayenne for some spice....or maybe even italian dressing...
You could also go with a grilled chicken sandwich with mayo and bacon.....a healthier option would be cucumber and tomato slices with sour curd....
Or a cucumber soup is also a good option...blend it along with salt n pepper, garlic cloves, onion powder, green chillies......
Cold Pea Salad
1 pk Frozen tiny peas, thawed
Cauliflower-chopped
1/2 Red onion, chopped
4 oz Shredded cheddar cheese
Real bacon bits
Ranch dressing
Mix all together, and serve chilled.
CHEESE STUFFED PEPPERS %26amp; COLD CUTS
1 (8 oz.) pkg. cream cheese, softened
2 tbsp. milk
2 (4 oz.) pkg. shredded cheddar cheese (2 c.)
1/4 c. sweet pickle relish, drained
1 tsp. Worcestershire
1/2 tsp. salt
1 c. chopped radishes
4 sm. green peppers, halved lengthwise
Salad greens
Horseradish sauce
Assorted cold cuts
Early in day or day before: In large bowl with mixer at medium speed, beat cream cheese and milk until smooth. Reduce speed to low; beat in next 4 ingredients until well blended. With spoon, stir in radishes. Press cheese mixture firmly into green pepper halves; cover and refrigerate.
Just before serving: With sharp knife, cut each stuffed green pepper half into thirds. Serve with horseradish sauce and assorted cold cuts. Makes 8 servings.
HORSERADISH SAUCE:
In small bowl, combine 1/2 cup mayonnaise or salad dressing, 1/2 cup sour cream, 1 tablespoon horseradish, 1 teaspoon sugar and 1/2 teaspoon salt. Makes about 1 cup.
WIKI WIKI CHICKEN SALAD
4 c. cubed, cooked chicken
1 can mandarin oranges, drained
2 c. fresh pineapple chunks (or well drained canned)
1 c. seedless grapes, halved
1/2 c. slivered almonds, toasted
mayonnaise, salt, pepper to taste
Combine chicken, oranges, pineapple %26amp; grapes with salt %26amp; pepper to taste, and just enough mayonnaise to moisten; toss lightly. Serve on lettuce leaves......
SOUTH OF THE BORDER SALAD
1 iceburg lettuce, shredded
1 can pinto beans, drained
1/2 onion, diced
2 tomatoes, cut up
1/2 lb. grated cheddar cheese
sliced black olives
sliced avocado
1 8-oz. jar Salsa (or Catalina or French salad dressing)
several handfuls crunched up tortilla chips
Mix everything together and serve.....
