Basic pasta recipe:
Cook noodles. It's important that you don't cook the noodles all the way through in the water. When you think they're close to done, take a piece of pasta out and bite it or cut it in half. You will see a white starch line down the middle of the pasta. Dump it into the colander then. The residual heat from the pasta and steam will cook it the rest of the way and it will be perfect. If you don't do this, it will be overcooked and mushy. Another trick if you miss the starchline point is to immediately spray the pasta with cold water once it's drained in the colander. Cooling it stops the cooking process. But then it's cold, so unless you're making pasta salad, you'll need to warm it up again when you sauce it.
Stuff to go on the noodles
1 type of fat (oil, butter, bacon grease, margarine, etc.)
1-3 types of other flavoring agents (herbs, spices, vinegar, lemon juice, olives, Parmesan, feta or other cheeses, bacon, garlic, onion, nuts, etc.)
salt and pepper
1 or more vegetables cut up and cooked lightly
some meat or seafood (totally optional)
Get a big mixing bowl, giving the pasta plenty of room, and toss your ingredients thoroughly. Or you can use a pot that's big enough, and just heat your oil and ingredients in the bottom of it, then add the noodles on top and mix up.
Here is the secret to using herbs and spices:
They have to be heated to get the best flavor out of them. If you just dump them in dry they will not taste like anything. Heat your oil or fat in the skillet and put your herbs and spices in that for 30 seconds to a minute while the oil is warm (but not so hot it will burn them automatically) Then use that oil for the pasta.
Onion and garlic also taste better when they have been cooked and browned in oil a little (called caramelization).
This is how to make pasta and it works no matter what ingredients you have.

Pasta with olive oil %26amp; garlic. Infuse the olive oil with chopped garlic and toss with pasta. I like adding some sauteed veggies too.
Try this one, its wonderful:
Quick, Easy -N- Fast Spicy Pepper Penne Recipe
4 T. olive oil
3 red peppers, seeded and cut into strips about an inch wide
1 large onion, chopped
2 cloves of garlic, minced
2 1 lb. cans of crushed tomatoes
About 3/4 lb. penne, ziti or rigatoni
About 6 oz. to 1/2 pound chorizo or pepperoni, sliced thinly
A little butter for greasing the pan
About 1/2 C. white breadcrumbs, your own or commercial, seasoned
1 t. dried rosemary
About an ounce freshly grated Parmesan cheese
Preheat the oven to 350掳F.
Heat 3 tablespoons of the oil in a skillet and cook the onions and pepper over medium heat until golden and soft. It takes about 10 minutes.
Add the garlic and cook for another minute.
Add the tomatoes.
Cook the pasta according to the package. Drain and mix into onion and pepper. Add the chorizo.
Spoon the pasta and sauce into a 3- to 4-inch-deep buttered casserole. Mix the breadcrumbs, cheese and rosemary. Sprinkle on top. At this point you can put it into the fridge overnight, or freeze.
To serve, drizzle on the remaining oil and bake for 15 to 20 minutes until golden.
well anything is easy if you know how to cook. otherwise, everything might be hard, no matter how much we make it easy for you. so I'm assuming that you somehow know the basics of cooking like sauteing, frying, boiling and baking.
Pasta Alfredo:
1. simply saute 1 head crushed garlic and 1 whole chopped onion. add 1 can of tuna flakes (about 315 g in oil, drained). set aside.
2. make the basic white sauce: melt 1/2 cup butter. add 2 tablespoons flour, stirring all the time. add a carton of all purpose cream (250 g). add 1 chicken bullion cube, dash of pepper, oregano and 1/4 tsp basil. stir all the time until slightly thick.
3. mix white sauce and sauteed tuna mixture. set aside.
4. cook pasta according to package direction.
5. you have choices on how to finish this:
a. pour tuna sauce on top of pasta on a single serve plate,
generously top with grated parmesan cheese and chopped
parsley.
b. put pasta on a large serving dish. put sauce on a separate
dish and other toppings on smaller dishes, all with serving
spoons/forks/pasta tongs.
c. mix pasta with tuna sauce. put in a baking dish. top with
mozzarella or quickmelt cheese and bake for 20-30 minutes
at 350 F.
d. mix pasta with tuna sauce. put in a baking dish. top with
crumbled potato chips and bake for 20 minutes.
bon appetit!
