Am looking for healthy recipes without too much pasta.?

all the bad foods are outa the house no chocolate, no sweets not canned veggies even. everything is starting new fresh veggies etc. He says no meat which he takes as red meat. chicken and others is ok. he is kinda seafooded out at the moment and i know he cant do chicken too much and he really doesnt like pasta too much. See what i got to work with? lol not fun so if anyone has some unique idea's i would be ever so greatful.Am looking for healthy recipes without too much pasta.?
Barbecue chicken in the oven served with tossed salad and jacket potatoe. Seafood salad. Bake a sweet potatoe in its jacket in the oven and serve with breaded haddock or cod (cooked in oven) garnish with a homemade tomato and onion and mushroom and parsley sauce for flavour add knor chicken cube. Prawn coctail starters and chicken drums cooked in the oven and jacket potatoe steamed cabbage and so onAm looking for healthy recipes without too much pasta.?
1: An easy every day salad. Romaine lettuce, minced sundried tomatoes, blue cheese or feta cheese, a diced avacado, a diced tomato. Toss with 2 parts balsamic and 3 parts olive oil, salt and pepper.





2: Put 1/2 lb of chicken breast in the blender with a boullion cube and a garlic clove. Blend until chicken is finely minced. Throw onto a hot sautee pan with some olive oil and cook until chicken is browned. Make sure to stir a bit to seperate it as it cooks. Buy some corn or flour soft tortilla and cook right on the burner foar about a minute , flipping it every 15 seconds or so. add the chicken to the tortilla with the usual veggie assortment and do not forget the cilantro





3: 1 lb of black beans, 1/2 gallon of water, 2 boollion cubes, 1/2 an orange, 1 small onion 6 garlic cloves. Simmer on Medium low for three hours until beans are soft. Stir occasionally. Mix vigourously at the ens and the garlic and onion will dissolve. Flavor is awesome.
If you're grilling, try kabobs. We've been addicted and it's just meat and veggies, or all veggies. Brush with olive oil and spice em up. Use cherry tomatoes, pepper pieces, zuchini, summer squash and onions. You can incorporate beef with the veggies, but for Pork and Chicken (that take longer to cook) I use a separate kabob so I can cook them longer.
Try grilling portabella mushroom caps basted in olive oil. Their texture is great for ';burger'; replacements. Go for veggie burgers - Morning Star has several different types. Some are really good with salsa and cheese.





For a chicken alternative, try duck. If possible, get wild vs. farmed. It is gamey, but much leaner. The orange sause is easy to make!





This is fairly Southern, but you can also do salmon patties. Yeah, they're fried, but if you use the olive oil, it isn't too bad. Canned salmon, egg, a little flour or corn meal, and a little chopped onion/jalepano (sp?)/bell pepper (I just like the onion). Patty it out; roll it in corn meal; cook until lightly browned.





For a pasta alternative, try the new whole wheat pastas as a side. Muller's makes a really good version that isn't cardboard (we've tried several). This can be really good with several steamed veggies added to your fav red sauce. It also works well with a fat free ranch dressing, sliced black olives, cherry tomato halves, and chopped onion as a cold side, too.

Water
paste marinara sicilian style is delicious and cheap and easy to make, no meat(almost) and low fat,





1 can of chopped tomatoes


1 chicken stock cube/cup of hot water


1 quarter cup olive oil


1 or 2 clove garlic


bit a pepper


tablespoon of basil


half teaspoon of mustard, preferably the powdered mustard





heat pan with olive oil, throw in chopped garlic then tomatoes and cup of chicken stock (without the mug :-) ) , then put in mustard, pepper n basil, simmer for 20 minutes until the sauce has become a bit thick but still a bit watery. pour over your favorite pasta, mmm im so hungry now!!
agree with the kebabs. anything grilled tastes good. even vegetables! you can also try a mixed salad (rocket, baby spinach etc) with an easy dressing (my concoction) that you can top with anything from smoked salmon, grilled mushrooms or chicken breast or even grilled tofu.


Dressing:


3 TBsp each of white wine balsamic vinegar and extra virigin olive oil, one crushed garlic clove, 1/2 -1 tsp sugar, 1 TBsp soy sauce. put into a glass container and leave in the fridge for one hour to let the flavours develop. shake well and drizzle over the salad. enjoy!!
